Spiked Grilled Cheese Sriracha (Printer-friendly)

Crispy golden bread filled with sharp cheddar and spicy sriracha mayo for a bold, melty delight.

# What You'll Need:

→ Bread & Cheese

01 - 4 slices hearty sourdough or white sandwich bread
02 - 4 slices sharp cheddar cheese, approximately 4.2 oz
03 - 2 slices Monterey Jack cheese, approximately 2.1 oz (optional)

→ Sriracha Mayo

04 - 3 tablespoons mayonnaise
05 - 1 to 1.5 tablespoons sriracha sauce, adjusted to taste
06 - 1 teaspoon fresh lime juice

→ Butter

07 - 2 tablespoons unsalted butter, softened

# Steps:

01 - In a small bowl, combine mayonnaise, sriracha sauce, and lime juice. Mix until smooth and adjust the heat level to preference.
02 - Spread a thin layer of softened butter on one side of each bread slice; these will be the outer surfaces.
03 - Place cheddar and Monterey Jack cheese evenly on the unbuttered side of two bread slices.
04 - Top with the remaining bread slices, buttered side facing out, creating two sandwiches.
05 - Spread a generous layer of sriracha mayo over the buttered (outer) side of each sandwich.
06 - Heat a nonstick skillet or griddle over medium-low heat until warm.
07 - Place sandwiches mayo-side down onto the skillet. While cooking, spread sriracha mayo on the top sides.
08 - Grill for 3 to 4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
09 - Remove sandwiches from heat, allow to cool for one minute, then slice and serve warm.

# Expert Advice:

01 -
  • The sriracha mayo adds a spicy punch that makes this feel grown-up, not like something from your childhood.
  • It comes together in 18 minutes flat, which means dinner when you're genuinely hungry, not stressed.
  • One sandwich can swing either direction—comfort when you need it, bold flavor when you want to feel alive.
02 -
  • Medium-low heat is your friend here—crank it to high and you'll have a burnt shell with a cold cheese center, which defeats the entire purpose.
  • The sriracha mayo on both sides is crucial because it creates a barrier that keeps the bread from drying out while also adding flavor in every bite.
03 -
  • Softened butter spreads without tearing the bread, but if you forget, let it sit at room temperature for five minutes—it makes all the difference.
  • The key to an evenly melted center is low heat and patience; rushing it with high heat gives you a burnt outside and a cold inside every single time.
